Red Velvet Cake Recipe

Just in time For Valentine's Day! Here is a yummy and easy red velvet cake recipe.

Red Velvet Cake

Ingredients:

For the Cake -
1/2 cup shortening
1 1/2 cup sugar
2 eggs
1 tsp vanilla
1 tsp butter flavor
1 tsp vinegar
1 tsp soda
3 tbsp cocoa
2 1/2 cup sifted cake flour or 2 1/2 cup all purpose flour sifted, less 5 tbsp
1 cup buttermilk
1 tsp salt
1 1/2 oz bottle of red food coloring
For the Icing -
3 tbsp flour
1/2 tsp salt
1 cup milk
1 cup shortening
1 cup sugar
2 tsp vanilla
1/2 tsp butter flavor
Instructions:
To make the cake

Cream shortening, sugar, eggs, flavors.

Make a paste of the cocoa and the food coloring; add to first mixture

Alternately add flour and buttermilk

Mix soda and vinegar in small bowl and add to batter.

Blend well. Bake in three greased and floured 9 or 10 inch cake pans for 20-25 minutes at 350

Let cool completely and cover with frosting.



To make the icing

Cook milk, flour and salt on stove top until thick, stirring constantly. Let cool.

Cream shortening and sugar very well and add flavors. Combine with first mixture, beat very well and then ice your three layer red velvet cake!

A Bit of Happy Meals: Pumpkin Scones

Better Than Starbucks Pumpkin Scones

Ingredients:

Pumpkin Scones

2 cups all purpose flour

7 Tablespoons sugar

1 T baking powder

1/2 tsp salt

1/2 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground cloves

1/2 tsp ground ginger

8 Tablespoons cold butter

1/2 cup canned pumpkin

3 Tablespoons skim milk

1 large egg



Icing

1 cup powdered sugar

2 Tablespoons milk

1/4 tsp ground cinnamon

1/4 tsp ground nutmeg

1/8 tsp ground cloves

1/8 tsp ground ginger

orange food coloring (optional)



Instructions:

Preheat oven to 425* degrees



1.line cookie sheet with silpat or parchment paper

2. Combine flour, sugar, baking powder, salt, and spices in a large bowl. Cut in butter with a pastry knife, until mixture is crumbly with no chunks of butter.

3. In a separate bowl, whisk together pumpkin, milk and egg.

4.Fold wet ingredients into dry ingredients and form into a ball.

5.Pat out dough onto lightly floured surface and form into a 1 inch thick rectangle

(about 9 inches long and 3inches wide)

6.Divide into three sections and then make each section into two triangles.

7. bake for 15 minutes scones should begin to turn light brown, let cool on rack

8. make icing by mixing powdered sugar and milk together with spices and apply to scones when cooled. I applied first coat of icing then colored the rest orange and drizzled over the tops.

A Bit of Happy Meal: Chocolate Chip Cookies

Best Chocolate Chip Cookies!

Ingredients:
1 cup margarine, softened in microwave

1 1/2 cups brown sugar

1 1/2 cups sugar

2 large eggs

2 teaspoon vanilla

4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 bag of semisweet chocolate chips (12 oz.)
Instructions:
Beat butter and sugars until well blended. Add in and beat eggs and vanilla until smooth, scraping down sides of bowl. Add all dry ingredients, beat well, scrap sides, beat some more. Clean off beater and add chips and mix with spoon. We use a melon baller to make the cookies uniform sized. Drop onto cookie sheet and bake for 8 to 10 mins at 375. Allow them to cool before transferring them to a cooling rack or directly to your mouth. Enjoy!  Stop by my site for many more recipes!

Each week we are going to start posting A Bit of Happy Meal recipe that we have collected. This week we are keeping it simple, a very easy (and yummy) cake recipe.




Very Easy Cake Recipe For Everybody To Make Homemade Cakes

If you're fed up with the dull and boring cakes that you can buy from the local store, then perhaps it's time to get back into homemade cakes. The cakes you buy may be beautifully packed to look attractive, but read the ingredients and you will see how many preservatives and additives are used to ensure they stay fresh on the shelf.

One of the easy ways to make cakes at home is to use cake mix, but again these prepacked mixes often contain ingredients designed to make the mix cheap and long lasting, rather than to produce a wholesome cake. But, help is at hand - soft, melt-in-the-mouth sponge cakes can now be made very quickly and easily thanks to soft margarines which enable ingredients to be blended very quickly.

Cakes can still be made using traditional methods of creaming together fat and sugar and then adding the eggs and other ingredients, and there's no doubt that cakes made in the traditional way have a unique texture. But if you're just getting back into making homemade cakes then try this very easy sponge which has to be the quickest cake to make from basic ingredients. You simply put the flour in a bowl and mix in all the other ingredients!

Very Easy Sponge Cake
4 oz...110g self raising flour, sifted
1 tsp baking powder
4 oz...110g quality, soft margarine at room temperature
4 oz...110g caster sugar
2 large eggs
2-3 drops vanilla essence
To finish:
Icing/confectioners' sugar, jam

Two 7 in (18cm) cake tins, at least 1.5in (4cm) deep, greased and bases lined with greaseproof or waxed paper.

Preheat the oven to Gas Mark 3, 170 deg C, 325 deg F.

Sift the baking powder and flour into a large mixing bowl. Make sure the margarine is soft and simply add all the other ingredients to the bowl and beat them well until everything is thoroughly mixed together. An electric mixer will give good results. The mixture should just drop from a wooden spoon when tapped on the side of the bowl, so if needed mix in 1-2 teaspoons of warm water to get the right consistency.

Divide the mixture between the lined and greased tins and place on the centre shelf of the preheated oven for about thirty minutes. When cooked, the top of the sponge should be golden and springy to the touch.

When cooked, allow to cool for about a minute. Loosen the edges with a knife and turn the sponges out onto a wire rack to cool. Carefully remove the lining paper and when completely cool spread your favourite jam on the sponge and sandwich together. To finish, dust the top with icing/confectioners' sugar if you like.

What could be easier? A lovely homemade sponge cake in less than an hour from beginning to end.

Every once in a while, I just want cake. Yummy, moist, diet-wreakingly-awesome cake. Well, in my quest for finding the perfect recipe, I turned to good ol' Martha Stewart for delicious classic cakes. The article has recipes for several yummy cakes, including a No-Bake Birthday Cake, Moist Devil's Food Cake, Caramel Cake, Lemon Meringue Cake, Chocolate Cake with Coconut-Pecan Frosting and last but not least - Carrot Cake.

Speaking of carrot cake, it brings to mind the baby riding the carrot from the amazingly amusing blog, Cake Wreaks. As the name suggests, people submit pictures of professionally made cakes gone hilariously  wrong. The people take makes the cakes are certainly....talented (Creative? Crazy?). It never fails to make me laugh.
